Vanilla tones in the nose are subtle, while red fruit skin is ascendant and follows through to the palate, joined there by a moderate rye spice. The dryness of O yeast is resolute, with a gripping, almost red-wine-style mouthfeel in the midpalate. If you like a non-sweet Bourbon, O yeast is your new best friend. You can count on this Bourbon for a nicely complex fruit tone—including cherry skins but also the almond- and vanilla-tinged pit, almost touching maraschino liqueur—ending in a delicate, brushing kiss of rye spice.
