Contact Us Tequila/mezcal First produced in the 16th century, Tequila is a type of mezcal, a term for any distilled alcohol made from the agave plant that is native to Mexico. For a mezcal to be called Tequila, it must adhere to strict standards, which mandate that it be produced in specific state regions and be produced from blue agave. Tequila must be produced from a minimum of 51% agave. Tequila is typically categorized based on age. Silver (plata; blanca) is aged for no longer than a few months and is generally clear. Gold (oro; joven abocado) uses coloring to resemble aged tequila. Reposado, or rested, is typically aged for up to one year. It must be produced in the Cognac region of France. It must be produced from 90% Ugni Blanc, Folle Blanche or Colombard grapes. It must be distilled twice in copper pot stills. Lastly, it must be aged at least 2 ½ years in oak barrels, which lends color and taste distinction to the spirit. There are six growth areas, or crus, within the Cognac region that are used to classify cognacs: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires.
